HAPPY EASTER!!!

I hope you have all had a very good day and a good Easter.

My week started with Sally and Maggie Heard still here, but packing for their trip to Edinburgh. I went to work that morning - so they could have the room to spread out their stuff, get it repacked, etc. We'd done a washing, and so most of their things were at least clean. I came back at noon, and they were all packed, had had lunch, etc. We chatted for a bit, and then I took them to the train station. I got them on the correct train, and they were off to Edinburgh. I am sure they enjoyed that beautiful city. I came back home, and they'd tidied up everything. It was so nice of them!

Tuesday I was off to acupuncture in the morning, and then back to work for the afternoon, and on Wednesday and Thursday. Our weather had really been nice, and it was supposed to hold for the weekend. We had Good Friday off, and therefore, on Thursday, it was Polly O'Malley's leaving do. She had a training contract with a firm in Wetherbey, which is not far from here. I am so sad she is gone, as her bright smile was always a welcome sight! Anyway, after work I went and got my hair cut, then wandered over to Wetherspoons to join the group. There they were, and it was good to see so many out. However, around 9pm, I decided I needed to head home, which is exactly what I did.

I was up early on Friday and into the supermarkets, as I'd invited Peter, Gareth, Pam and Dana for dinner on Saturday, for Mexican food. Well, let me tell you, it was a real education shopping for things for a Mexican dinner. Yes, we have tortilla chips, Jalapeņo peppers, tequila, chili powder, cumin, etc., and you can even buy tortillas (but only 6 in a package that costs quite a bit. Thank goodness for family and friends who have brought them to me!). My plans, and I'd opened my big mouth and told them all, was to make taco salad, guacamole, refried beans and chicken enchilada casserole, tres leches cake and margaritas! Guess what?! No big cans of refried beans. So, I did find pinto beans in a can, and I was able to add some peppers, spices, oil, etc. and mash them. Margarita mix? Forget it! No, I squeezed limes til the world looked level (thank goodness for electric juicers!), made a simple syrup and got a big jug of them made. Fortunately, the tres leches cake was a snap, as I've had a recipe for that for years from a Nicaraguan. Also, no guacamole in the chilled foods section. So, I had found some avocados that seemed good, and I got out my trusty Mexican cookbook again and got to mashing and adding. Eventually, my fridge was laden with food: Tres Leches Cake, enchilada casserole, shredded cheese, sour cream, Margarita mix, shredded lettuce, seasoned meat, etc. I didn't make the guacamole until Saturday. It took me a large part of Friday to get it all done, and when it was over, I had to clean up the kitchen, etc. I just sat back and relaxed and watched telly.

Saturday dawned, and it was a bit grey and overcast and a drizzle coming down. I walked into town and ran into Teri Rhodes at the market. We decided to have lunch and off we went to the Golden Fleece, after I'd picked up a birthday card from her parents' stall. We had a good time and a good visit, and then we walked back; she to get her car, and me to home. I got home and started setting the table, got the guacamole made, etc. I got the place cleaned and straightened, and then got myself clean! They all arrived about 6:30, and we had a good time. They all loved the food, and were very appreciative of all my efforts. They left about 10pm or so, and I set about cleaning up, and after I had it all done but the glasses, I went to bed.

Sunday I got up to a new time, as Daylight Saving Time started today. I got the glasses done, vaccuumed and mopped, and then got dressed and walked to church at Central Methodist. We had a good sermon, sang some good hymns, and then I was back home. It had become quite cool again, and there was a drizzle coming down. I decided that today would be my day of rest, and I just reelaxed with a good book.
